Maison Noir

Origins

Born from Passion

In 2019, Chef Alexandre Dubois returned to Europe after a decade in Asia, driven by a singular vision: to create a restaurant where every detail serves the pursuit of perfection.

The name “Maison Noir” reflects our philosophy: in darkness, the smallest light becomes luminous. We strip away the unnecessary to reveal what truly matters—the purity of flavor, the integrity of ingredients, and the warmth of genuine hospitality.

Our kitchen sources exclusively from biodynamic farms within a 150-kilometer radius, working directly with growers who share our obsession with quality. Every morning, our team visits the market before dawn, selecting each ingredient with the discernment that only comes from years of tasting, testing, and refining.

Alexandre Dubois

Two decades of training in the world's most demanding kitchens, distilled into a singular culinary voice.

Chef Dubois began his career at L'Ambroisie in Paris before staging at Noma in Copenhagen and Kikunoi in Kyoto. These experiences shaped his belief that technique should be invisible and ingredients should speak for themselves.
